๐ I've been making this lemon curd recipe for decades... love having a jar on hand to swirl into yoghurt, add to a cake, or simply to eat on hot buttered toast.
Ingredients:
juice of 3 lemons (approx. 110ml)
200g caster sugar
2 eggs pinch of sea salt
50g unsalted butter
1. Place the lemon juice, sugar, eggs and salt in a medium saucepan on a gentle heat and whisk continuously for 5โ 8 minutes, or until the mixture thickens.
2. Whisk in the butter, cube by cube, until all the butter has dissolved.
3. Pour into a wide bowl and cool for around 20 โ30 minutes, or until room temperature.
