...have this dressing.
This dressing is a real game-changer. Creamy, punchy and packed with all those Caesar salad flavours. When I nailed the recipe for the dressing my husband ate most of it out of the blender before I had finished making the salad. I love a Caesar salad with the salty, umami and creamy dressing on those crisp green leaves, perfect for large party entertaining.
I recently had a big family gathering with vegan guests. And being someone who prefers to make inclusive dishes rather than separate extra dishes I thought why not try make this dish for everyone. So out went the anchovies and egg yolks and in came a tin of chickpeas (or my case a packet as that's how they are sold in Sweden) and miso paste. I make the dressing quite thick as I've found it is also delicious spread on toast or in a sandwich.

Preheat the grill to a hot heat/180c. Line a baking tray with baking paper.
Mince the garlic to a paste and stir with the oil. Cut the bread into large cubes and toss together with the oil. Place under the grill until golden (shake the tray or turnover the croutons so brown evenly). You could also toast the croutons in large pan.
To make the dressing:
Blend all the ingredients together. Taste for seasoning. Adjust with pinch of salt or a little more lemon juice.
Toss the lettuce and cucumbers with the dressing. I find it easiest to use my hands to toss everything together. Add the croutons on top and grate on some parmesan. If you're serving individual plates drizzle a little olive oil on top to finish.
*Substitute for a plant based hard mature cheese. Let me know in the comments if you've tried any good ones.
