My Swedish Kitchen Episode 2: Sausage from Scratch

In the second episode of My Swedish Kitchen, I explore Swedes love for hot dogs and the humble art of making sausages from scratch. Before the rage of food trucks and street food festivals, hot dog stands were feeding the masses in Sweden. Much like how we have a kebab at the end of a night in the UK, Swedes have always been a fan of the hot dog.

I visit an old-school "grill" in Stockholm, Daisy's Hot Dog Stand, who pride themselves in their unusual flavour combinations. I try a hot dog with a side of prawn salad – so tasty! Inspired by these flavours, I make potato cakes with smoked frankfurter sausages, followed by a light and fresh prawn salad! (p.32(+)

On my journey through the southern district of Skåne, I pick up some heritage apples for my hazelnut and apple cake recipe (with super delicious caramelised brown butter) p.279. Apples are as common as cinnamon buns in Sweden and are celebrated at festivals and apple markets.

I meet with two former chefs from Stockholm who followed their passion for making the most incredible sausage from scratch - Södra Kompaniet Charkuterier – made from free-range and local pigs. I learn about the artisanal approach to smoking sausages and try my hand at a few of the processes.

Using these incredible sausages I make my favourite comfort dish, sausage stroganoff.
