My Swedish Kitchen Episode 4: Swedish House Man's Food

In episode 4, I focus on cooking with the seasons. Swedish food has long relied on root veg and cabbage varieties – ingredients that have often been regarded as uninspiring. As the trend towards traditional ingredients continues, these ingredients are having a comeback! 

Along the coastline of South West Sweden, I visit Ugglarp farm whose produce is celebrated in fine dining restaurants around the country. Kale loves the cold weather (perfect for Sweden) and thrives on the salty sea wind! The most popular of veg is cabbage, which inspires my spring cabbage vinaigrette. Find it on p28 of my book!

Along with the best ingredients, using some reliable and trusty equipment is essential in my kitchen. Cast iron has always been a staple in my cupboard, so I was so excited to visit Skeppshult Ironsmith's to get an insight into how labour intensive the manufacturing is. Cast iron is for life and is often passed down through families! 

I visit a tomato farm with over eighty varieties to choose from – red, white, purple, striped and even black. Tomatoes are so delicious in season and an incredible example of Scandinavian produce. They work beautifully in my mixed cherry tomato salad with crispy bacon – served with my favourite butternut squash waffles, made with my cast iron waffle pan! Find the recipe here.

Inspired by the Swedish landscape, I make my parsnip and praline cake. The parsnips bring a natural sweetness and nuttiness, which pairs perfectly with the sweet praline. Find it on p64
