The June 2023 Monthly Menu

It's finally summer! ☀️ This new season has brought more simple pleasures, including spending time with friends and family at picnics. The perfect spot, a cold drink, and an array of vibrant summer dishes. Here's my starter, main course, and dessert, specifically designed for portability and tastes best in the sun on a chequered blanket. 

The season has also reminded me of one of my absolute favourite treats: freshly ripened Swedish strawberries (they really are the best). You'll notice I've included them in both my starter and main course here, adding a delicious fresh sweetness to these recipes. 

Starter: Strawberry, Mint and Feta Summer Rolls

I thought I'd begin this picnic with these wonderfully fresh summer rolls. They're absolutely brilliant to bring to a picnic because they are completely self-contained (aka mess free!) and literally taste of summer. And dipping them into the punchy mango salsa brings out all those fruity, creamy, peppery flavours even further!

Main course: B.L.S. Pasta Salad

I'm following the summer rolls, with another recipe that uses those gorgeous, ripe strawberries: a bacon lettuce and strawberry pasta salad! I adore this salad because of the different textures (crunchy, soft, and chewy all together) and the vibrant range of flavours. The strawberry adds a delicate sweetness that balances the whole salad, especially the creamy, salty feta yoghurt dressing - perfect for those not so keen on a heavy mayo dressing.

Dessert: Paradise Chocolate Ice Bars

Coconut, lime, chocolate...the tropical flavours in these ice bars transport me to paradise (hence the title!) You might be thinking that ice bars would be a disaster at a picnic, and will be paradise soup by the time you've got round to eating them. In fact, they are best served 30-45 mins outside the freezer in a cooler box, as they soften slightly and take on a wonderful creaminess.
