The May 2023 Monthly Menu

The beginning of May means a firm start to spring in Sweden (we have to be a little more patient over here!) I was inspired by this new season to create a bright spring menu, with light, fresh green flavours.

Starter: Wannabe Caesar Salad

An alternative to the traditional Caesar salad. Forget anchovies and egg yolks here and replace them with my revolutionary plant-based salad dressing. It's the perfect partner to the fresh salad greens and my crunchy garlic croutons.

Main Course: Spring Minestrone Soup with a Charred Jalapeño Salsa

This soup is packed with my favourite greens: asparagus top and tails, celery, spring onions, and peas give a fantastic nourishing flavour. Instead of the traditional pasta, I'm using butter beans, adding a little extra creaminess to the soup. A fiery jalapeño salsa lifts the earthy vegetal flavours even further.

Dessert: Black Forest Gateau Chocolate Mousse

Thanks to science (rapid heating and cooling down) you only need chocolate and water to create an absolutely delicious mousse! Here, I've added sweet maraschino cherries and crème fraîche to create an irresistable Black Forest Gateau flavour.
